Reese Krispie Bars

As the boys prepare for their hunting outing this weekend, I decided to make a treat for them to enjoy on their adventure. The bars were super easy to make and as I'm a bad judge of character (I don't much care for any of the ingredients involved) I put my #1 taste tester to the job.

Dan tried the bars and said they were great (not because he had to)! With that said, if you find yourself with a sweet tooth and not much time to bake, these are the perfect filler. I'm off to sunny Houston for the weekend with hopes of bringing back a good story or two and some good pictures to share!


Reese Krispie Bars
1c. light corn syrup
1c. granulated sugar
1/4 tsp. salt
1c. peanut butter
1/2c. semi-sweet chocolate chips
1 tsp. vanilla extract
4 1/2c. Rice Krispies Cereal
6 regular size Reese's Peanut Butter Cups, each diced into 8 pie shaped wedges

In a medium saucepan, combine corn syrup, sugar and salt and bring mixture to a boil over medium heat, whisking constantly (to dissolve sugar). Once mixture reaches a boil, reduce heat slightly and allow to gently boil for 1 minute. Remove from heat, add in peanut butter, chocolate chips and vanilla, stir mixture until chocolate chips have completely melted. Pour in Rice Krispies and toss mixture to evenly coat. Pour mixture into a buttered 9x9 baking dish and gently spread and press into an even layer. Allow to cool until just warm to the touch then evenly distribute diced Reese's Peanut Butter Cups over the top and lightly press them onto the coated cereal. Enjoy them warm or put them in the refrigerator to set the chocolate. Store in an airtight container.
